Apple Pie Cinnamon Rolls

Apple pie filling swirled into cinnamon rolls, baked to golden perfection.

Ingredients

Dough

  • 3/4 cup milk (lukewarm)
  • 1/2 cup granulated sugar (divided)
  • 2 1/2 tsp instant yeast ((1 packet))
  • 1/2 cup plain greek yogurt
  • 1/2 cup salted butter
  • 2 eggs
  • 1 tsp vanilla bean paste (or extract)
  • 4 1/2 cups all purpose flour
  • 1 tsp salt

Cinnamon Filling

  • 1/2 cup salted butter (softened)
  • 1 cup brown sugar
  • 2 tbsp cinnamon
  • 1 tsp vanilla bean paste (or extract)
  • 1/2 cup milk (for pouring over the rolls)

Apple Pie Filling

  • 4 tbsp salted butter
  • 3 apples (peeled and diced small)
  • 1/2 cup light brown sugar
  • 4 tbsp maple syrup
  • 2 tsp cinnamon
  • 1 tsp apple pie spice (optional)
  • pinch salt (large)
  • 1 tbsp cornstarch (for slurry)
  • 2 tbsp water (for slurry)
  • 1 tsp vanilla bean paste (or extract)

Directions

    Mix all ingredients except corn starch slurry and vanilla.

    Cook in a small saucepan stirring occasionally until sugar is melted and apples have softened, about 10 mins.

    Add the cornstarch slurry and cook until thickened, about 1-2 mins.

    Add vanilla and set aside.

    In a large bowl combine the flour, yeast and salt together and set aside.

    In the bowl of a stand mixer mix together the milk, sugar, greek yogurt, butter, eggs, vanilla and flour mixture.

    Mix on low using dough hook for 1 min and let rest for 5 minutes so the flour can absorb the liquids.

    Mix on medium for 5-7 minutes.

    Transfer to greased bowl, cover and let it rest for 30-45 mins.

    Prepare cinnamon roll filling by mixing softened butter, brown sugar, cinnamon and vanilla and set aside.

    Turn the dough out onto surface and lightly sprinkle the top with more flour.

    Roll the dough into a large rectangle and spread the cinnamon roll filling followed by the apple filling on top.

    Tightly roll the dough into a log and cut using a sharp knife or thread.

    Place the rolls into a buttered pan, cover and let rise for another 25-30 mins.

    Preheat oven to 350F

    After the rolls have proofed warm the milk and pour over the rolls.

    Bake at 350F for 25-30 mins or until the tops are golden and cooked through.
