Carrot Cake Cinnamon Rolls

Fluffy, goey and perfect for Easter morning brunch.

Ingredients

Dough

  • 3/4 cup milk of choice (lukewarm)
  • 1/2 cup granulated sugar
  • 2 1/2 tsp instant yeast (1 packet)
  • 1/2 cup plain greek yogurt
  • 1/2 cup salted butter
  • 2 eggs
  • 1 tsp vanilla bean paste or extract
  • 4-4 1/2 cups all purpose flour
  • 1 cup finely grated carrots (water removed)
  • 2 tbsp cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • 1 tsp salt

Cinnamon Filling

  • 1/2 cup salted butter (softened)
  • 1 cup brown sugar
  • 2 tbsp cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • 1/2 cup finely grated carrots (water removed)
  • 1 tsp vanilla bean paste or extract
  • 1/2 cup milk of choice (for pouring over the rolls)

Directions

    Start by finely grating your carrots and ringing them with a paper towel to remove most of the water and set aside.

    Prepare the dough next.

    In a large bowl combine the flour, yeast, salt and spices together and set aside.

    In the bowl of a stand mixer mix together the milk, sugar, greek yogurt, butter, eggs, vanilla, and carrots and mix until combined.

    Slowly add the flour mixture.

    Mix on low using dough hook for 1 min and let rest for 5 minutes so the flour can absorb the liquids.

    Mix on medium for 5-7 minutes.

    Transfer to greased bowl, cover and let it rest for 45 mins.

    Prepare cinnamon roll filling by mixing softened butter, brown sugar, spices, carrots and vanilla and set aside.

    Turn the dough out onto surface and lightly sprinkle the top with more flour.

    Roll the dough into a large rectangle and spread the cinnamon roll filling all over top.

    Using a pizza cutter or sharp knife cut into 6 large rolls or 12 smaller ones.

    Tightly roll each strip and place into a buttered pan, cover and let rise for another 25-30 mins.

    Preheat oven to 350F.

    After the rolls have proofed warm the milk and pour over the rolls.

    Bake at 350F for 25-30 mins or until the tops are golden and cooked through.
