Split pea soup
A hearty, comforting split pea soup with ham and vegetables.
Ingredients
- 1 lb dried split peas
- 8 oz diced ham (diced)
- 1 tbsp olive oil
- 3 ribs celery (diced)
- 3 carrots (diced)
- 1 medium onion (diced)
- 3 cloves garlic
- 6 cups chicken broth
- 2-3 cups water
- 1 tsp thyme
- 2 bay leaves
- salt (to taste)
- pepper (to taste)

To a large pot add 1 tbsp oil and sauté onion, carrots and celery for 5 mins until lightly brown and onions are translucent. Add the diced ham, and sauté until lightly browned, about 3 mins. Add the garlic and thyme and sauté for 2 mins more.

Add split peas, broth, bay leaves, and 2 cups of water. Bring to a boil and reduce heat to low and simmer covered and stirring occasionally until peas are broken down and tender, 70-80 mins.

Remove from heat, add salt and pepper to taste and serve with croutons and a drizzle of olive oil.
Notes
Note: The soup will thicken as it cools, if it is too thin, simmer uncovered for the last 20 mins, if it is too thick add water to thin it out.
