Bruschetta
Bruschetta with tomato-basil topping on crispy baguette slices finished with balsamic glaze.
Ingredients
- 2 cups cherry tomatoes (cut into quarters)
- 1/4 cup fresh basil (chiffonade or roughly chopped)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 piece baguette
- garlic clove
- balsamic glaze (drizzle on top to finish)
- to taste salt
- to taste black pepper
Directions

Quarter the tomatoes and chiffonade or roughly chop the basil and add them to a medium bowl.

Add 2 tbsp olive oil and 1 tbsp balsamic vinegar to the same bowl, season with salt and pepper and mix well.

Let the tomato mixture sit in the fridge for about 30 mins to allow the flavors to combine.

In the meantime slice your baguette into 1/4 - 1/2 inch slices and drizzle with a little bit of olive oil, salt and pepper.

Toast or grill the slices until golden brown and crispy, about 2-3 mins.

Cut the garlic clove in half and set aside.

Remove the toast from the heat and immediately rub the garlic clove over the toasted bread while it’s still warm.

Top each slice with the tomato bruschetta mixture and drizzle with balsamic glaze to finish.

Serve immediately and enjoy!
