Chicken Tinga
A smoky, slightly sweet chicken tinga with raisins, served on tostadas.
Ingredients
- 3-4 chicken breasts
- 1 1/2 onions onion (chopped)
- 2 cloves garlic
- 1 cup carrots (chopped)
- 1 cup potatoes (chopped)
- 1 handful raisins
- 2 bay leaves
- salt (to taste)
- pepper (to taste)
For the sauce
- 2 pieces tomatoes (medium)
- 1 can chipotle peppers in adobo sauce (small can)
- 1/4 onion
- 2 cloves garlic
- 1 teaspoon pepper
- 1 teaspoon cumin
- 1/2 teaspoon cloves
- 1 tablespoon chicken bouillon (optional)
- salt (to taste)

Boil chicken breasts with 2 cloves, small piece of onion salt and pepper until cooked.

Blend together the sauce ingredients, taste for seasoning and set aside

In a large pan or skillet brown your onions for about 10 minutes. Add carrots and potatoes to skillet and brown for another 10 minutes. Add shredded chicken and sauté for another 15 minutes until lightly browned. Add the sauce, bay leaves, raisins and simmer for 20-30 mins.
