Ingredients
For the meat
- 2 lb pork ribs (bone-in; cut into 2in pieces)
- 1/4 piece onion
- 2 cloves garlic
- to taste salt
- to taste pepper
For the nopales
- 5-6 pieces nopales (diced)
- 1 clove garlic
- 1/4 onion
- to taste salt
- to taste pepper
- 1 cup water
For the Salsa
- 8 pieces tomatillos
- 2 pieces jalapeños
- 2 pieces chiles de árbol
- 1/4 piece onion
- 2 cloves garlic
- 1/2 tsp oregano
- 2 pieces cloves
- to taste salt
- to taste pepper

In a large pot add the ribs, onion, garlic, salt, enough water to cover the meat and cook for 30 mins.

In a separate pot add your diced nopales, onion, garlic, salt, and 1 cup of water. Cook on medium heat until they change color and set aside.

While the meat and nopales are cooking, make the salsa. In a small pot add tomatillos, jalapeños, chilis, and 1 cup of water. Bring to a boil and cook for about 10 mins until tomatillos change color. Let them cool slightly and blend with onion, garlic, oregano, cloves, salt & pepper.

After the meat has been cooking for 30 mins, drain and sauté in 2 tbsp oil until browned on all sides.

Add the salsa and nopales. Bring to a boil and reduce the heat to a simmer and simmer for 15 mins.

Serve with warm tortillas.
