Vietnamese chicken wings

Crispy grilled chicken wings tossed in a sticky Vietnamese fish-sauce glaze.

Ingredients

  • 1/4 cup fish sauce
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 3-4 cloves garlic (finely minced or garlic paste)
  • 1-2 pieces Thai chilies (thinly sliced; substitute with jalapeño (about 1/3 pepper) if unavailable; for less heat omit)
  • 1 tbsp lime juice (or white vinegar)
  • red pepper flakes (optional)
  • salt (to season wings)
  • pepper (to season wings)
  • 1 tbsp oil (for sautéing garlic)

Directions

  1. 1

Season your wings with salt and pepper and grill until crispy

  2. 2

Make the sauce by adding 1 tbsp oil to a small pot and sauté your garlic until fragrant, then add the rest of the ingredients and simmer until sauce is thickened.

  3. 3

Toss the wings in the sauce and enjoy!

Notes

If you don’t have Thai chilies, substitute with jalapeño; I used about 1/3 of a jalapeño. If you don’t like spice, skip the chilies.
