Vietnamese chicken wings
Crispy grilled chicken wings tossed in a sticky Vietnamese fish-sauce glaze.
Ingredients
- 1/4 cup fish sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 3-4 cloves garlic (finely minced or garlic paste)
- 1-2 pieces Thai chilies (thinly sliced; substitute with jalapeño (about 1/3 pepper) if unavailable; for less heat omit)
- 1 tbsp lime juice (or white vinegar)
- red pepper flakes (optional)
- salt (to season wings)
- pepper (to season wings)
- 1 tbsp oil (for sautéing garlic)

Season your wings with salt and pepper and grill until crispy

Make the sauce by adding 1 tbsp oil to a small pot and sauté your garlic until fragrant, then add the rest of the ingredients and simmer until sauce is thickened.

Toss the wings in the sauce and enjoy!
Notes
If you don’t have Thai chilies, substitute with jalapeño; I used about 1/3 of a jalapeño. If you don’t like spice, skip the chilies.
