Coconut Horchata
A coconut milk horchata inspired by traditional horchata, using coconut milk instead of evaporated milk.

Rinse and soak the rice and cinnamon in 3 cups of water in the fridge for at least 6 hours or overnight

Add everything to a blender and blend until smooth.

Strain into a pitcher, with lots of ice and garnish with grated cinnamon and a cinnamon stick. If the condensed milk doesn’t sweeten it enough to your liking add additional sugar to taste.
