Roasted Salsa de Molcajete
Using a molcajete is the most authentic way to make a salsa and it is worth it!

On a preheated skillet roast the tomatillos, roma tomato, and garlic until charred on all sides.

On the same skillet quickly roast the chilis for 1-2 minutes and remove. Do not burn them or they will be bitter.

Transfer chiles to a molcajete along with coarse sea salt and grind until it is a coarse powder.

Add the peeled garlic and grind into a paste.

Add the tomatillos and tomato one at a time and gently pound to combine with the garlic chile paste.

Mix in the diced onion and taste for salt.

If salsa is too thick you can thin it by adding a splash of water.

Using a molcajete is the most authentic way to make a salsa and it is worth it! This salsa is perfect for beef, carne asada or to top any of your favorite tacos!
